Beet Tartare

Ingredients:

  • 4 medium-sized beets, roasted or boiled
  • 1 tablespoon capers, drained and chopped
  • 1 tablespoon cornichons or pickles, finely chopped
  • 1 small shallot, finely minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar or red wine vinegar
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
  • Fresh herbs like parsley, chives, or dill for garnish
  • Optional toppings: crumbled goat cheese, microgreens, or a poached egg

Instructions:

  1. Cook the Beets:

    • Preheat your oven to 400°F (200°C).
    • Wash the beets thoroughly and wrap them individually in aluminum foil.
    • Roast the beets in the oven for about 45-60 minutes, or until they are tender when pierced with a fork. Alternatively, you can boil them for 30-40 minutes.
